- Remove legs, devein, clean and pat fry prawns. Clean cucumber and capsicum and cut into wedges. Chop spring onion and ready to use.
- Deep fry prawn in hot oil, drain well. Parboil cucumber and capsicum in hot oil and remove, set aside.
- Heat up 2 tbsp of oil, sauté ginger slices and chopped garlic, add in tomato sauce and bring to cook until sauces thicken.
- Return prawns, cucumber, capsicum, stir fry till cooked.
- Garnish with spring onions and serve.
