  1. Remove legs, devein, clean and pat fry prawns. Clean cucumber and capsicum and cut into wedges. Chop spring onion and ready to use.
  2. Deep fry prawn in hot oil, drain well. Parboil cucumber and capsicum in hot oil and remove, set aside.
  3. Heat up 2 tbsp of oil, sauté ginger slices and chopped garlic, add in tomato sauce and bring to cook until sauces thicken.
  4. Return prawns, cucumber, capsicum, stir fry till cooked.
  5. Garnish with spring onions and serve.
